Ingredients:
1 lb boneless skinless chicken breasts, sliced or cubed
1 tbsp olive oil
2 tbsp butter
1 small onion, diced
3 cloves garlic, minced
1 cup uncooked orzo
2 cups chicken broth
1 cup heavy cream (or half-and-half)
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
Optional: red pepper flakes, lemon zest, or extra Parmesan for topping
Directions:
Heat olive oil in a large skillet over medium heat. Add chicken and cook until lightly browned and mostly cooked through; remove and set aside.
Add butter and sauté the onion until softened. Stir in garlic and cook 30 seconds.
Add orzo and toast lightly for 1 minute.
Pour in chicken broth and heavy cream; stir to combine.
Return chicken to the skillet. Season with Italian seasoning, salt, and pepper.
Cover and simmer on low for 10–12 minutes, stirring occasionally, until orzo is tender.
Stir in spinach and Parmesan until melted and creamy.
Adjust seasoning, garnish, and serve warm.
