

One-Pot Chicken and Rice

Ingredients section:
1 lb boneless skinless chicken thighs or breasts, cut into bite-size pieces
1 cup long-grain white rice (uncooked)
2 cups chicken broth
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup frozen peas and carrots (or fresh if preferred)
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
Optional garnish: chopped parsley or grated parmesan
Directions section:
Heat olive oil in a large pot over medium heat.
Add the chicken and cook until lightly browned, about 5 minutes.
Stir in the onion and garlic; cook until softened.
Add rice, paprika, thyme, salt, and pepper. Stir to coat.
Pour in chicken broth and bring to a boil.
Reduce heat to low, cover, and simmer for 18–20 minutes, until rice is tender.
Stir in peas and carrots, cover, and cook 5 more minutes.
Fluff with a fork and garnish before serving.
