One-Pot Chicken and Rice

Ingredients section:

  • 1 lb boneless skinless chicken thighs or breasts, cut into bite-size pieces

  • 1 cup long-grain white rice (uncooked)

  • 2 cups chicken broth

  • 1 tbsp olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 cup frozen peas and carrots (or fresh if preferred)

  • 1 tsp paprika

  • 1/2 tsp dried thyme

  • 1/2 tsp salt (adjust to taste)

  • 1/4 tsp black pepper

  • Optional garnish: chopped parsley or grated parmesan

Directions section:

  1. Heat olive oil in a large pot over medium heat.

  2. Add the chicken and cook until lightly browned, about 5 minutes.

  3. Stir in the onion and garlic; cook until softened.

  4. Add rice, paprika, thyme, salt, and pepper. Stir to coat.

  5. Pour in chicken broth and bring to a boil.

  6. Reduce heat to low, cover, and simmer for 18–20 minutes, until rice is tender.

  7. Stir in peas and carrots, cover, and cook 5 more minutes.

  8. Fluff with a fork and garnish before serving.
