Ingredients
Crust
1 ½ cups graham cracker crumbs
¼ cup granulated sugar
6 tablespoons butter, melted
Filling
4 (8-ounce) packages cream cheese, softened
1 cup granulated sugar
1 cup sour cream
1 teaspoon vanilla extract
3 large eggs
2 tablespoons all-purpose flour
Directions
Step 1: Prepare the Crust
Preheat oven to 325°F (165°C).
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then set aside.
Step 2: Make the Filling
In a large bowl, beat cream cheese until smooth. Add sugar and mix until fully combined. Blend in sour cream, vanilla, and flour.
Step 3: Add Eggs
Add eggs one at a time, mixing on low speed just until combined. Do not overmix.
Step 4: Bake
Pour filling over crust and smooth the top. Bake for 55–65 minutes, until the center is slightly jiggly and the edges are set.
Step 5: Cool Slowly
Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour. Remove and refrigerate for at least 4 hours (overnight is best).
Step 6: Serve
Slice and serve plain or topped with fresh berries or fruit sauce.
