Instapot Collards

This Southern-style staple becomes "fall-apart tender" in a fraction of the traditional stovetop time. The Instant Pot perfectly renders the smoky flavor from ham hocks, creating a rich, flavorful "pot liquor" (the savory broth) that is essential for authentic soul food greens.

Ingredients

  • 2 lbs fresh collard greens, washed, stems removed, and chopped into 2-inch pieces

  • 1 to 2 smoked ham hocks

  • 1 large onion, chopped

  • 3 garlic cloves, minced

  • 4 cups chicken broth (or water)

  • 2 tablespoons vinegar

  • 1 teaspoon Slap Ya Mama seasoning

  • 1 tablespoon olive oil or bacon fat

  • Salt and black pepper to taste

Directions

  1. Add Liquid and Seasoning: Pour in the chicken broth, onion, garlic, ham hocks, vinegar, and red pepper flakes.

  2. Pressure Cook: Secure the lid and set the valve to Sealing. Select Manual/Pressure Cook on High for 45 minutes.

  3. Release Pressure: Once the timer finishes, allow for a Natural Pressure Release (NPR) for at least 15 minutes before releasing any remaining steam. Press the cancel button on the One Pot.

  4. Shred Meat: Remove the ham hocks to a cutting board or plate. Discard the skin and bones, then shred the tender meat and put back into the pot.

  5. Layer Ingredients: Add the chopped collard greens on top; you may need to press them down firmly to fit, as they will wilt significantly during cooking.

  6. Pressure Cook: Secure the lid and set the valve to Sealing. Select Manual/Pressure Cook on High for 35 minutes.

  7. Release Pressure: Once the timer finishes, allow for a Natural Pressure Release (NPR) for at least 15 minutes before releasing any remaining steam.

  8. Serve: Adjust salt and pepper to taste. Serve warm with a side of cornbread for dipping in the pot liquor.
