Honey Garlic Air Fryer Salmon Bites

Prep time: 10 minutes
Cook time: 8–10 minutes
Servings: 2
Ingredients
Salmon: 1 lb. skinless salmon fillets, cut into 1-inch cubes
Oil: 1 tbsp olive oil or avocado oil
Seasoning: 1/2 tsp garlic powder, 1/2 tsp paprika, 1/4 tsp salt, 1/4 tsp black pepper
Glaze: 1 tbsp honey (or maple syrup) and 1 tbsp low-sodium soy sauce
Garnish: Fresh parsley or sesame seeds (optional)
Instructions
Preheat & Prep: Preheat your air fryer to 400°F (200°C).4 While it heats, pat the salmon cubes completely dry with a paper towel. (This is the secret to getting a good sear!)
Season: In a medium bowl, toss the salmon cubes with the oil, garlic powder, paprika, salt, and pepper until evenly coated.
Arrange: Place the salmon bites in the air fryer basket in a single layer. Make sure they aren't touching so the air can circulate freely.
Air Fry: Cook for 7 to 9 minutes. At the 5-minute mark, shake the basket gently to ensure even browning.
Glaze: In the last 2 minutes of cooking, whisk the honey and soy sauce together. Quickly brush the mixture onto the salmon bites or toss them in a bowl with the glaze and return to the air fryer for the final 60 seconds to caramelize.
Serve: Remove promptly and garnish with parsley or sesame seeds.

Pro Tips for Success
Don't Overcook: Salmon can go from perfect to dry very quickly. Check for an internal temperature of $145°F$ ($63°C$), or look for the meat to be opaque and flake easily with a fork.
Skin Removal: If you bought salmon with the skin on, it's easiest to remove it by sliding a sharp knife between the flesh and skin while the fillet is still whole, before cubing.
Uniformity: Try to cut the cubes into similar sizes so they all finish cooking at the exact same time.
